Flour, Spelt, Whole from Camas Country Mill - Local Product!

Our Organic Spelt Flour is made with spelt berries grown on Huntons’ Farm in Junction City, Oregon and stone-ground at Camas Country Mill in Eugene.

Nutty and slightly sweet flavor, spelt is high in protein and nutrients. Due to its particular gluten, spelt does not rise as high in baked goods as wheat, but is easier to digest.

This is a whole grain flour which is ideal for making pastas, denser breads, cookies and pancakes. In working with spelt its best not to over-mix.

Stone-ground at Camas Country Mill in small batches to retain maximum freshness, the slow milling process does not heat the grain or flour.

Best kept stored in the freezer or refrigerator until ready to use.

Huntons' Farm has been instrumental in advancing the cause of increasing local food production in Lane County. By establishing Camas Country Mill, the Huntons support farmers by creating value-added products like Oregon-grown flour.
