Red Fife Bread Flour was North America’s preferred bread wheat in the 19th century, fathering many modern red wheat varieties. As whole grain bread flour, Red Fife is unparalleled. It has a profoundly herbaceous and nutty fresh wheat flavor. Bread made from Red Fife produces a moist, satisfying crumb and a lovely crust with deep toasty caramel notes. This flour is stone-ground in small batches to retain optimal freshness. The slow milling process does not heat the grain or flour, so the nutritional benefits of the Hard Red Fife Wheat remain intact. Our Red Fife Wheat is stone ground at a newly opened mill in North Eugene. The family-owned mill is Food Alliance and Oregon Tilth Organic Certified. Grown on Hunton’s Farm in Junction City, Oregon, our Red Fife Wheat is pesticide free. This third-generation family farm is Food Alliance Certified and one of the first in the Willamette Valley to transition grass seed acreage to grains and beans.
As with all whole grain flours, our Red Fife Wheat Flour is best stored in the freezer or refrigerator until ready to use.
