We are pleased to be able to offer our customers a sprout-able, heirloom grain called Emmer Farro, which is grown regionally on a certified organic family farm in Washington State. Emmer (Triticum turgidum dicoccum)is a highly nutritious grain that has been used in Europe for thousands of years. A wheat with a very simple structure—28 chromosomes as compared with over 200 chromosomes in modern wheat—Emmer is high in protein, low in gluten. Cooking Emmer grain is simple: Add 1 C Emmer to 4 C salted water or stock. Lightly simmer together for about 1 hour (less if soaked overnight). Drain.
Yields 2 ½ - 3 cups cooked.
