Description

Emmer, an ancient hulled wheat, was one of the first cereals ever domesticated in the Fertile Crescent. Over the centuries, emmer was gradually abandoned in favor of hull-less and higher-yielding varieties of durum wheat. Emmer is known as farro in Europe and is staging a comeback as a gourmet specialty as both whole grain and flour. Farro is a catch-all Italian term for “ancient grains”. Emmer is considered the original farro which is why we refer to our Emmer as “Emmer Farro”.

Our Organic Heirloom Emmer Farro comes to us from Camas Country Mill. High in protein and low in gluten, emmer farro is an heirloom grain with a simple structure; it has 28 chromosomes as compared with over 200 chromosomes in modern wheat.

Whole grain emmer farro takes more than an hour to cook. Emmer farro’s sweet nutty flavor is a natural fit for pancakes & waffles.

Cooking directions: for each cup of emmer farro, bring 2 cups of water to boil. Add emmer farro and reduce heat. Simmer for 15-20 minutes, or until desired chewiness. Try in salads, pilafs or soups.
